According to the theory of Paracelsus, an alchemist, astrologer and Swiss physician, who lived during the Renaissance, the word "gnome" comes from the Greek gnosis meaning knowledge, and was among the first to argue that the gnomes were spirits of the earth and the underworld, able to move naturally into the darkness, away from sunlight that , on the theory Paracelsus, had the power to "petrify" these mysterious and tiny fairy creatures. Jealous guardians of hidden treasure and inhabitants of the woods, are the characters who belong to the fairy-tale fantasy of the European peoples, and especially to the Germanic folklore. Represented with a beard and mustache and conical hat with the characteristic red color, are present in many tales of the Brothers Grimm.

This recipe I dedicate it to all children attending the Department of Neurophysiology of Saint Lucia Foundation in Rome, a place very special and competent that the Lazio Region wants to close because it has sufficient funds. I therefore wish to support the laudable initiative Caris with my modest contribution to his collection of recipes for children.
Minifarfalle with minipolpette
chicken and potatoes


Ingredients
Butterfly (mini size) to taste, 1 chest chicken, 2 potatoes, salt to taste bread crumbs, egg, grated parmesan cheese to taste, homemade tomato sauce, extra virgin olive oil.
Preparation
Cook the chicken and potatoes steam, transfer the potatoes in a bowl, mash with a fork and add the chopped chicken, a handful of bread crumbs, a handful of grated parmesan, an egg, a pinch of salt and mix well together. The mixture should have the consistency of meatloaf. In a saucepan, pour the tomato sauce by adding about a tablespoon of extra virgin oil. With the mixture formed small meatballs, add them to tomato sauce and cook over medium heat. Cook the minifarfalle al dente and add to the sauce.
